The name wheat beer is used to refer to a large family of beers brewed by fermenting wheat, always mixed with barley malt; they are distinguished by their slight creaminess, sweetish flavor and distinct sour note.

They are usually highly fermented, meaning they belong to the ale family; particularly in Germany they must be by law.

They are sometimes called “white beers,” but not because of their color, which is indeed often a dull blond (mainly due to the yeast parts in suspension), but because of the foam that is generated during fermentation.

While barley is always malted, wheat can be malted or unmalted: this peculiarity is the basis of the difference between German “weiss” and Belgian “blanche”
